The texture is great, and its a superb idea to use real chocolate. Any tips for a frosting I could make with a whisk or does that just not work for frosting? You can bake this into 10 to 12 cupcakes! You can almost definitely use 3 eggs, but use 2 whole and 2 yolks if you want it extra-rich. I didnt use this frosting as I had some swiss meringue buttercream left over from a previous baking session, but am looking forward to using this frosting recipe in the future :-) The last two times I made only half the frosting, which still gave the same effect as the photos did. Make sure you use the bake setting, not the broil setting (I did that once when I was a kid!) I had to chime in because Ive now made this twice and it is delightful! 1/2 teaspoon espresso powder (I used this instead of vanilla, purely based on personal taste) Id still frost it! It worked so well and was fun for a small celebration for two people, though it could easily have served four.
